Our Summer Book Club journey through the book of Acts has pointed to the way the early church went into each others’ homes & broke bread. In that vain, Shannyn came across a healthy recipe for Spinach Balls this weekend that might be just the ticket for your open houses.
Spinach Balls
Ingredients 220 g Fresh Spinach Leaves, trimmed & washed. About 6 cups.
3 Eggs
1/2 cup Grated Cheese
1 cup Gluten Free Panko Crumbs
1/4 cup Fresh Herbs (Your Choice)
Instructions Preheat oven to 350º
Place spinach leaves into a saucepan, add salt & cover with boiling water. Cover & set aside.
Rinse spinach with cold tap water. Drain using your hands to squeeze all the remaining water. (Should yield about 2/3 cup)
Finely chop spinach. Transfer into a mixing bowl.
Add eggs, cheese, herbs & crumbs. (Salt & Pepper optional)
Combine with a spoon or your hands, until it forms a batter from which you are able to form balls. (Add crumbs to help with density)
Place balls on a non-stick cookie tray covered with baking paper.
Bake at 350º for 15-20 minutes or until golden on the top.
Serve with dips of your choice!
